Ambrosia for Christmas

Southerners believe that this fruit dessert lives up to its name, which means food for the gods. It’s a must on many a Christmas dinner table. Thanks to one of our readers Linda for suggesting this perfect recipe for Christmas to all the readers of dietandhealthblog.net. Let’s move on to its preparation method.

Ingredients:

4 medium-sized oranges,
Orange juice,
2 small bananas, sliced,
1½ cups fresh pineapple chunks or 1 can (15¼ ounces) pineapple tidbits or chunks packed in juice, drained,
2 tablespoons sifted confectioners sugar,
1-tablespoon brandy or dry sherry (optional),
2 tablespoons coconut

Preparation Method:

1.    Grate ½ teaspoon orange rind. Peel and section oranges over a bowl to catch the juice. Measure the juice. If necessary, add enough additional orange juice to measure ¼ cup. Set aside. Dip the banana slices into a little orange juice, turning to coat.
2.    To serve, evenly divide the oranges, bananas, and pineapples among 6 sherbet dishes.
3.    In a small bowl, stir together the orange rind, the ¼ cup orange juice, the confectioners sugar, and brandy (if using). Spoon some of the juice mixture over each serving. Cover and refrigerate for 1 or 2 hours. Sprinkle with coconut before serving. Makes 6 servings.
