People with food allergies may experience allergic reactions to “safe” foods because of the following:
1. Contamination of foods through improper handling.
2. Misleading labels, for example, when eggs are listed as an emulsifier.
3. Ingredient switching, for example, when a shortage of vegetable oil results in substitution with tropical oil such as coconut oil.
So, what should you do?
1. Read labels religiously.
2. Use extreme caution when eating in restaurants or as a guest in someone’s home. Don’t be afraid to ask about the recipe’s ingredients
3. Avoid processed foods.
4. Carry an epinephrine self-injector (Epi-Pen) in case of accidental exposure.
