1. Preservatives :Common preservatives used are benzoic acid and benzoates, nitrates and nitrites, and sulfites.
a) Benzoic acid and benzoates are found in soft drinks, beer, fruit products, margarine, and acidic foods. They are used because they extend shelf life and protect food from fungi and bacteria.
b) Nitrites and nitrates are found in processed meats, such as sausages, hot dogs, bacon, ham, and lunch meats as well as in smoked fish. They also extend shelf life and protect food from fungi and bacteria; preserve color in meats and dried fruits.
c) Sulfites are found in dried fruits, shredded coconut, fruit-based pie fillings, and relishes. Sulfites also extend shelf life and protect food from fungi and bacteria as well.
So, in a nut shell, we can say, preservatives extend the shelf life of foods and also prevent them from bacterial or fungal growth, which otherwise can spoil our food stuff with in hours or days.
